ORIGIN: Oltrepò Pavese
VINE VARIETY: Croatina in purity and Barbera in small percentages.
SOIL: Clayey, slimy with calcareous marl, located around the 45° parallel north
GRAPE CULTIVATION: Guyot-trained
HARVESTING: By hand and mechanical harvesting.
VINIFICATION: Grape pressing and destemming with maceration on the skins and fermentation at controlled temperature with cultured yeasts.
REFINING: In stainless steel vats, followed by a second natural fermentation in pressurized vats at 18°C temperature. During ageing the wine undergoes several analytical controls to assure its integrity.
BOTTLING: Cold sterile
ALCOHOL CONTENT: 11%vol
COLOUR: Vivid ruby red with purplish tinges.
NOSE:Intense and persistent, fruity and fragrant. It reminds of blackberries and strawberries.
PALATE: Fresh, pleasantly round and balanced, with a pleasant sparkling hint.
INTERNATIONAL PAIRINGS: Waffeln – Germany, Vienna sausages with sauerkraut – Austria
SERVING TEMPERATURE: 12 – 14°C
CURIOSITY: The name has an uncertain origin: it seems to derive from the Lombardic “bono hard”, which means strong and brave.
