Bonarda / DOC Oltrepò Pavese
ORIGIN: Oltrepò Pavese
VINE VARIETY: Croatina in purity and Barbera in small percentages.
SOIL: Clayey, slimy with calcareous marl, located around the 45° parallel north
GRAPE CULTIVATION: Guyot-trained
HARVESTING: By hand and mechanical harvesting.
VINIFICATION: Grape pressing and destemming with maceration on the skins and fermentation at controlled temperature with cultured yeasts.
REFINING: In stainless steel vats, followed by a second natural fermentation in pressurized vats at 18°C temperature. During ageing the wine undergoes several analytical controls to assure its integrity.
BOTTLING: Cold sterile
ALCOHOL CONTENT: 12%vol
COLOUR: Vivid ruby red with purplish tinges and thick and lingering froth.
NOSE: Fruity, with hits of black currant, wild blackberries with a spicy pepper note.
PALATE: Chamois-soft and mouth filling, rightly tannic, sapid with a pleasant sparkling hint.
INTERNATIONAL PAIRINGS: Kabaub Shaami (Afghanistan) – Beef burritos (Mexico)
SERVING TEMPERATURE: 14 – 16°C
CURIOSITY: The name has an uncertain origin: it seems to derive from the Lombardic “bono hard”, which means strong and brave.
