Bonarda / DOC Oltrepò Pavese

ORIGIN: Oltrepò Pavese

VINE VARIETY: Croatina

SOIL: Clayey, slimy with calcareous marl located around the 45° parallel north.

GRAPE CULTIVATION: Guyot-trained.

HARVESTING: By hand.

VINIFICATION: Grape pressing and destemming with maceration on the skins and controlled temperature fermentation with selected yeasts.

 

REFINING: In stainless steel vats. Followed by natural second fermentation in pressurized tanks at 18°C with cultured yeasts. During ageing the wine undergoes several analytical controls to assure its integrity.

BOTTLING: Cold sterile

ALCOHOL CONTENT: 12%vol

COLOUR: Ruby red with purplish tinges, think and lingering froth.

NOSE: Fruity, with hints of blackberries and raspberries and a lightly spicy note.

PALATE: Fresh and mouth filling, sapid and balanced with a pleasant sparkling hint.

INTERNATIONAL PAIRINGS: Frikadelle (Germany) – Beef burritos (Mexico)

SERVING TEMPERATURE: 14 – 16°C

CURIOSITY: Wine made from organic grapes, grown without the aid of chemical and GMO substances. The vinification is done by using only selected, environmentally friendly products authorized by the European Regulation 203/2012.
