ORIGIN: Apulia
VINE VARIETY: Negroamaro and Primitivo.
SOIL: Clayey soil, slimy with calcareous marl.
GRAPE CULTIVATION: Bush-trained
HARVESTING: By hand, late harvest.
VINIFICATION: Grape pressing and destemming, maceration on the skins for 20 days, fermentation at controlled temperature with cultured yeasts.
REFINING: Short in large oak barrels. During ageing the wine undergoes several analytical controls to assure its integrity.
BOTTLING: Cold sterile
ALCOHOL CONTENT: 14.5%vol
COLOUR: Vibrant red with garnet red tinges.
NOSE: Intense, complex, with notes of ripe fruit such as plum and raspberries, raisins and candied fruit, vanilla, with hints of leather, tobacco and a few pleasant spicy notes.
PALATE: Warm, mouth filling, well structured, long lingering, balanced and harmonious.
INTERNATIONAL PAIRINGS: Peking Duck (China) – Sauerbraten (Germany)
SERVING TEMPERATURE: 14 – 16°C
CURIOSITY: This wine is born from the vinification of grapes that have naturally aged on the plant. The result is a soft and deep glass, with an incredible charm and suited for elegance.
