ORIGIN: Provincia di Pavia
VINE VARIETY: Pinot Grigio
SOIL: clayey, slimy with arenaceous limestone and gypsum located around the 45° parallel north.
GRAPE CULTIVATION: Guyot-trained.
HARVESTING: By hand.
VINIFICATION: grapre pressing and destemming, cold maceration and soft pressing with pnreumatic press.
REFINING: in stainless steel vats at 16° controlled temperature. during ageing the wine undergoes several analytical controls to assure its integrity.
BOTTLING: Cold sterile
ALCOHOL CONTENT: 12%vol
COLOUR: vivid straw yellow with slight golden highlights.
NOSE: Intense, lingering but at the same time delicate. it reminds of fruit such as pear and banana, with hints of rose and white flowers
PALATE: Fresh, sapid, well balanced, good length.
INTERNATIONAL PAIRINGS: Makuzushi (Japan) – Wiener Schnitzel (Austria)
SERVING TEMPERATURE: 10 – 12°C
CURIOSITY: Wine made from organic grapes, grown without the aid of chemical and GMO substances. The vinification is done by using only selected, environmentally friendly products authorized by the European Regulation 203/2012.
