DESCRIPTION
Pinot Nero Rosè / IGT Provincia di Pavia
ORIGIN: Province of Pavia
VINE VARIETY: Pinot Noir fermented after brief maceration on the skins
SOIL: Medium-textured with calcareous marl and gypsum located around the 45° parallel north.
GRAPE CULTIVATION: Guyot-trained
HARVESTING: By hand.
VINIFICATION: Grape pressing, destemming and soft pressing with partial maceration on the skins. Fermentation with cultured yeasts at controlled temperature
REFINING: In stainless steel vats, followed by a second natural fermentation in pressurized vats at 16°C temperature with cultured yeasts. During ageing the wine undergoes several analytical controls to assure its integrity.
BOTTLING: Cold sterile
ALCOHOL CONTENT: 12%vol
COLOUR: Soft pink with lilac tinges.
NOSE: Scents of strawberries and wild rose.
PALATE: Sapid, pleasantly acidulous with dry finish and pleasantly sparkling.
INTERNATIONAL PAIRINGS: Paella (Spain) – Steamed dumplings (China)
SERVING TEMPERATURE: 10 – 12°C
CURIOSITY: The name means small pinecone, indicating the typical characteristic of the vine that produces small bunches of grapes.
