VINE VARIETY: Monovarietal Primitivo
SOIL: Medium-textured located around the 40° parallel north.
GRAPEVINE CULTIVATION: Espalier
HARVESTING: Mechanical harvesting
VINIFICATION: Grape pressing and destemming and fermentation with maceration on the skins with cultured yeasts at 25°C controlled temperature.
REFINING: Temperature controlled stainless steel vats. During ageing the wine undergoes several analytical controls to assure its integrity.
BOTTLING: Cold sterile
ALCOHOL CONTENT:: 13% vol.
COLOR: Ruby red.
NOSE: Intense aroma, Mediterranean herbs and spicy finish reminding of dill.
PALATE: Balanced, lingering with marked herbaceous hints.
SERVING TEMPERATURE: 16° – 18°C
INTERNATIONAL COUPLINGS: Lentil soup – Egypt Kofte kebabs – Turkey
CURIOSITY: The first reliable historical documents about the vine spread date back to the second half of the 18th century thanks to Don Francesco Filippo Indellicati who noticed a vine in his vineyard which reached ripening before the others giving black, sweet and tasty grapes that could be harvested already at the end of August.
