Primitivo / IGT Puglia:
ORIGIN: Apulia in the provinces of Taranto and Brindisi.
VINE VARIETY: Primitivo with a small percentage of Negroamaro.
SOIL: Medium-textured located around the 40° parallel north.
GRAPE CULTIVATION: Espalier
HARVESTING: Mechanical harvesting
VINIFICATION: Grape pressing and destemming and fermentation with maceration on the skins with cultured yeasts at 25°C controlled temperature.
REFINING: Temperature controlled stainless steel vats. During the ageing the wine undergoes several analytical controls to assure its integrity.
BOTTLING: Cold sterile
ALCOHOL CONTENT: 12%vol
COLOUR: Ruby red.
NOSE: Intense aroma, Mediterranean herbs and spicy finish.
PALATE: Balance, lingering with pronounced herbal notes.
INTERNATIONAL PAIRINGS: Spatzil with bacon and raclette (Germany) – Fried Empanadas (Argentina)
SERVING TEMPERATURE: 16 – 18°C
CURIOSITY: The first reliable historical documents about the vine spread date back to the second half of the 18th century thanks to Don Francesco Filippo Indellicati, who noticed a vine in his vineyard which reached ripening before the others giving black, sweet and tasty grapes that could be harvested already at the end of August.
