VINE VARIETY: Monovarietal Sauvignon
SOIL: Clayey, smily with arenaceous limestone and gypsum.
GRAPE CULTIVATION: Espalier
HARVESTING: By hand
VINIFICATION: Grape soft pressing with pneumatic press. Fermentation with cultured yeasts at 16°C
REFINING: In stainless steel vats, with periodical lees stirring. During ageing the wine undergoes several analytical controls to assure its integrity.
BOTTLING: Cold sterile
ALCOHOL CONTENT: 12%vol
COLOUR: Straw-yellow with golden tinges.
NOSE: Intense and lingering with typical vegetal notes that bring to mind tomato buds and flowery notes of elder and magnolia flowers and a pleasant fruity finish.
PALATE: Pronounced, full-bodied, mouth filling, dry. Balanced and lean.
INTERNATIONAL PAIRINGS: Maryland Crab cakes (U.S.A.) – Sushi (Japan)
SERVING TEMPERATURE: 10 – 12°C
CURIOSITY: The name originates from the French term sauvage, which means wild and indicates the local origins of the vine.
