ORIGIN: Apulia
VINE VARIETY: Monovarietal Susumaniello
SOIL: Clayey silty with calcareous marl.
GRAPE CULTIVATION: Guyot-trained
HARVESTING: By hand.
VINIFICATION: Grape pressing and destemming, maceration on the skins for 15 days and fermentation at 25°C controlled temperature with cultured yeasts.
REFINING: Stainless steel. During ageing the wine undergoes several analytical controls to assure its integrity.
BOTTLING: Cold sterile
ALCOHOL CONTENT: 14%vol
COLOUR: Bright ruby red.
NOSE: Complex, with notes of red fruits and jam, delicate spicy hints, black pepper and leather.
PALATE: Warm, enveloping, structured, very persistent, with a good acidity that makes it apt to good aging.
INTERNATIONAL PAIRINGS: Bulgogi (Korea) – Flamberad Pepparstek (Sweden)
SERVING TEMPERATURE: 16 – 18°C
CURIOSITY: The name comes from the term “somarello” in Apulian vernacular, it indicates the high level of productivity of this vine which is loaded down with grapes “like a mule”. These vines begin to considerably decrease their productivity not before the first 10 years of their lives, thus benefitting the grapes which will produce structured and highly aromatic wines.
