ORIGIN: Oltrepò Pavese
VINE VARIETY: Monovarietal Croatina
SOIL: Medium textured with calcareous marl located around the 45° parallel north
GRAPE CULTIVATION: Guyot-trained
HARVESTING: By hand
VINIFICATION: Grape pressing and destemming with pre-fermentation maceration of the grapes, to extract colour and aroma, and fermentation at controlled temperatures with cultured yeasts.
REFINING: In stainless steel vats, followed by macro oxygenation and natural fermentation in pressurized vats at 16°C. During ageing, the wine undergoes several analytical checks to assure its integrity.
BOTTLING: Cold sterile
ALCOHOL CONTENT: 12,5% vol.
COLOUR: Bright vivid ruby red with thick and lingering purplish froth.
NOSE: Intense, persistent, hints of wild pansy, cherry, mixed berries, flowery notes of acacia, white flowers and spices like black pepper.
PALATE: Full, mouth filling, soft, lasting with a rounded finish and pleasantly structured tannins, fresh and savoury.

SERVING TEMPERATURE: 14-16° C
CURIOSITY: Wine and vine variety already mentioned in the Middle Ages, it is one of the most typical expressions of the terroir of Lombardy and Emilia. The Croatina vine variety, native of the area of Rovescala in the Oltrepò Pavese, was widely spread all around Norther Italy and it was cultivated even in Veneto and Argentina. In the nineteenth century Pierpaolo Demaria and Carlo Leardi devoted special attention to this vine variety, in 1967 it was classified in the DOC of Colli Piacentini, which bestowed great potential to this wine and gained a highly expressive product, easy drinking, cheered by the consumer, interest grabbing for both wine lovers and experts.
